Onion Soup Burger at Poste Moderne Brasserie

French dip meets French onion soup meets hamburger in Chef Dennis Marron’s indulgence. He puts a Virginia grass-fed beef patty on an onion bun and slathers on mayo and caramelized onions from the restaurant’s French onion soup. Then he melts comté cheese over it and dips the top of the bun in French onion soup.

Foie Brat at Urbana
Bratwurst goes gourmet with this recent introduction. Chef John Critchley makes foie gras sausage in house, griddles it, then simmers it in cider. It’s served with soubise onions and finished with herbs.
