Healthy Snack: Kyle Rourke’s PB&J Trail Mix

We’re nuts about trail mix, especially when it’s made in creative new ways. So it’s no surprise we’ve been asking for seconds (and thirds) of Kyle Rourke’s PB&J Trail Mix, a fun, bite-sized twist on the peanut butter and jelly sandwich. The Executive Chef at Red Star Tavern has been making the healthy snack to pair with the bottles of water given out in the rooms of Hotel Monaco Portland as part of the Kimpton yoga mat rollout.

Even if you’re not coming to “om” with us, you can enjoy Chef Rourke’s trail mix at home. Here’s the recipe. We promise there’s not a simpler (or yummier) one out there.

Ingredients:

2 cups salt roasted peanuts
1 cup peanut butter chips
1 cup dried cherries
½ cup orange jellies

Put all ingredients in a bow and mix.

See? Nothing difficult about it … except resisting those second and third helpings!
